Every time I craft a batch of Yacón Syrup Cookies, I’m reminded of the magical blend of cultures I was raised on, growing up in Seattle and experiencing the heritage of my Japanese roots. The unique component of this enticing recipe, the yacón syrup, adds a unique layer of complexity, subtly reminding me of the delicate yet harmonic balance that defines Japanese cuisine.

Yacón Syrup Cookies

A Journey of Flavors

These cookies aren’t your run-of-the-mill sugary treats. The yacón syrup brings a pleasant, earthy sweetness that creates an entirely new sensory experience. Playing against the tartness of the dried cranberries and the sweet burst of fresh apple, every bite is like a little exploration. And let’s not forget the oats and raisins, hearty and comforting, creating a decadent and delightful texture that’s simply irresistible.

This recipe is not entirely dissimilar to a few traditional Japanese confectioneries such as the Anko Cookies, which also play off the contrast between sweet and savory. Additionally, I’ve found these yacón syrup cookies to be an excellent pair with a warm cup of Ippodo green tea, helping the subtle flavors to bloom.

Healthful Indulgence

Beyond the delectable taste, the Yacón Syrup Cookies have some significant health benefits associated with their star ingredient. Yacón syrup is a natural sweetener derived from the yacón plant’s root, native to the Andes Mountains. This sweetener is known for its high fiber content and its potential aid in digestion due to the presence of FOS, short for fructooligosaccharides. Healthline provides a detailed insight into the benefits of yacón syrup, stating that it’s low on the glycemic index and may have beneficial effects on blood sugar. This makes our cookie recipe a sweet treat that takes your health into consideration.

Next time you’re in the mood for a baking adventure that deviates from the traditional path and offers a journey of flavors with an added healthful kick, let these Yacón Syrup Cookies be your guide. You won’t regret it.

What You’ll Need

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2/3 cup yacón syrup
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1/2 cup raisins
  • 1/2 cup dried cranberries
  • 1/2 cup diced fresh apple
ALLERGENS: Wheat, Milk, Egg

Method

Step One

Preheat your oven to 350°F (175°C). Then, line a baking sheet with parchment paper and set it aside.

Step Two

In a medium-sized bowl, whisk together the all-purpose flour, baking soda, and salt. Set this bowl aside as well.

Step Three

Using a larger bowl, beat the softened unsalted butter, yacón syrup, and granulated sugar together until the mixture is smooth and creamy. You can use an electric mixer to make this process easier and faster.

Step Four

Add the large egg to your butter mixture. Make sure to stir thoroughly so that the egg is fully combined with the other ingredients. After this, mix in the vanilla extract.

Step Five

Gradually add the flour mixture to your smooth butter mixture. Be careful to stir well so that all ingredients are thoroughly mixed.

Step Six

Scatter in the rolled oats, followed by the raisins, cranberries, and the diced fresh apple. Stir again until these ingredients are evenly distributed throughout your dough.

Step Seven

Take rounded tablespoons of your cookie dough and drop them onto the prepared baking sheets. Make sure to leave at least 2 inches space between each cookie to allow them to spread as they bake.

Step Eight

Bake your cookies for about 10 to 12 minutes, or until they are lightly golden. Let them cool on the baking sheet for a few minutes, then transfer them to wire racks to cool completely. Enjoy your Yacón Syrup Cookies!
