If you’ve been following my food journeys, you’ll know that I love sharing a recipe that blends the health-focused vitality of my West Coast roots with the comfort and satisfaction of traditional American fare. One of my most cherished culinary creations is the Yarrow Salad: A mixed green salad featuring fresh yarrow. Its balance of vibrant flavors and hearty nutrients makes it a unique, healthful addition to any meal.

Yarrow Salad: A mixed green salad featuring fresh yarrow

The Magic of Yarrow

What sets this salad apart is the addition of yarrow, a somewhat underutilized herb with a remarkable health legacy. Yarrow, with its antiseptic, anti-inflammatory, and astringent properties, is a stellar ingredient for maintaining gut health and boosting digestion (source). In addition, its slightly bitter flavor adds a unique kick, contrasting beautifully with the sweetness of the fruit and the tanginess of the homemade dressing.

Seasonally Fresh and Versatile

One quality I absolutely adore about this Yarrow salad is its versatility. It’s my go-to side dish for a sun-drenched spring day, a balmy summer night, or a crisp fall evening around the fire pit. The sweet notes from the apples, strawberries, blueberries, and raspberries bring to mind a refreshing fruit salad, while the mixed greens, yarrow leaves, walnuts, and crumbled feta cheese give it texture and depth similar to a classic Waldorf salad (source).

And, while I do love serving it alongside my beloved Lemon Herb Grilled Chicken or the simple yet savoury Baked Salmon, it’s so full of heart-healthy goodness that it can easily stand alone as the star of your lunch or light dinner (source).

In conclusion, this Yarrow salad isn’t just a feast for your taste buds; it’s also a treat for your body. Its refreshing blend of flavors and healthful ingredients make it a recipe truly worth relishing. So go ahead, give it a try and see what a difference a salad can make!

What You’ll Need

  • 8 cups mixed greens
  • 1/4 cup fresh yarrow leaves
  • 2 apples, cored and sliced
  • 1 cup strawberries, hulled and sliced
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 1/4 cup chopped walnuts
  • 1/4 cup crumbled feta cheese
  • For dressing:
    • 1/2 cup olive oil
    • 1/4 cup apple cider vinegar
    • 2 tablespoons honey
    • Salt and pepper to taste
ALLERGENS: Apples, strawberries, blueberries, raspberries, walnuts, feta cheese, honey

Method

Step One

First, clean and dry your mixed greens and fresh yarrow leaves. Ensure you have removed any dirt or unwanted particles. Once cleaned, combine the greens and yarrow leaves in a large salad bowl.

Step Two

Prepare your fruits by washing the apples, strawberries, blueberries, and raspberries. Slice the apples and strawberries into bite-sized pieces, then add them to the bowl of greens and yarrow. Add the whole blueberries and raspberries as well.

Step Three

It’s time to add some crunch. Chop your walnuts into pieces and sprinkle them over the salad. Crumble the feta cheese and sprinkle this over the salad as well.

Step Four

Now, let’s prepare the dressing. In a small bowl, combine the olive oil, apple cider vinegar, and honey. Stir until well mixed. Add salt and pepper according to your taste preferences.

Step Five

Drizzle your prepared dressing over the salad. Toss everything together until all ingredients are well coated in the dressing.

Step Six

Your Yarrow Salad is now ready to be served. This is best enjoyed fresh, so serve immediately.
