What You’ll Need

  • 2 pounds of pork loin
  • 1/2 cup of orange juice
  • 1/4 cup of lime juice
  • 1/4 cup of annatto seeds
  • 2 cloves of garlic
  • 2 teaspoons of kosher salt
  • 1 teaspoon of black peppercorns
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of cinnamon
  • 4 cloves
  • 2 tablespoons of vegetable oil
  • Wooden skewers (soaked in water)
ALLERGENS: Pork, Orange juice, Lime juice, Garlic, Vegetable oil

Method

Step One

Firstly, mix the orange juice and lime juice together in a bowl.

Step Two

In a dry pan, toast the annatto seeds, garlic cloves, black peppercorns, cumin seeds, dried oregano, and cloves over medium heat until they are fragrant. This should take around 2 minutes.

Step Three

Once they’re fragrant, transfer them to a blender and add in the kosher salt and cinnamon. Blend this mixture until it forms a smooth paste.

Step Four
