What You’ll Need
- 1 cup of yuzu juice
- 14 ounces of soft tofu
- 1/2 cup of sugar
- 1 cup of water
- 4 teaspoons of agar powder
- 6 yuzu peels for garnishing
- Fresh fruits of your choice for topping (optional)
Method
Step One
First, drain your soft tofu and then blend it in a food processor until it becomes smooth. Set it aside for later use.
Step Two
Second, take a saucepan and place it over medium heat. Mix in the yuzu juice, sugar and water and keep stirring until the sugar is fully dissolved.
Step Three
Once the sugar has dissolved, add the agar powder to the saucepan. Keep stirring the mixture consistently to prevent the agar powder from clumping together. Continue this until the agar powder is also completely dissolved.
Step Four
Next, pour the hot yuzu-agar mixture into the blender with the pureed tofu. Blend this until it becomes a homogeneous liquid. Ensure you are careful when blending hot liquids as they can easily splash and cause burns.
Step Five
Then, pour the resulting mixture into your chosen mold and place it in the fridge until it becomes firm. This process will typically last for about 2-3 hours.
Step Six
Finally, once your tofu has set, remove it from the fridge. If you wish, you can garnish it with yuzu peels and fresh fruits of your choice before serving your Yuzu Tofu.
