What You’ll Need

  • 2 large zucchini, around 1 and a half pounds each
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup mini pepperoni pieces
  • 1/4 cup finely chopped bell pepper
  • 1/4 cup finely chopped onion
  • 1/4 cup sliced olives
  • 1/4 cup sliced mushrooms

Method

Step One

Begin by preheating your oven to 400 degrees Fahrenheit, then line a baking sheet with parchment paper. This will prevent the zucchini from sticking during baking.

Step Two

Slice the two large zucchinis into 1/4 inch thick rounds and place them on the prepared baking sheet. Lightly brush both sides of the zucchini slices with olive oil and season them with salt and ground black pepper.

Step Three

After seasoning, place the baking sheet in the preheated oven and bake the zucchini slices for 10 minutes.

Step Four

Once the slices have baked, remove them from the oven but keep the oven on. Next, spoon a small amount of pizza sauce onto each zucchini slice, then top each one evenly with shredded mozzarella cheese.

Step Five
