What You’ll Need
- 8 ripe tamarillos
- 2 cups granulated sugar
- Juice of 1 large lemon
- 1 cup of water
- 1 cinnamon stick
- 3 cloves
- 1 star anise
Method
Step One
Start by preparing the tamarillos. Cut a small cross at the base of each fruit. Put them in a bowl, cover with boiling water and leave for a few minutes. The skin will start to peel back and can easily be removed. Once cooled, chop the tamarillos into small pieces.
Step Two
In a large pot, combine the tamarillos, granulated sugar, lemon juice and water. Stir over a low heat until the sugar is completely dissolved.
Step Three
Add the cinnamon stick, cloves, and star anise into the pot. Bring the mixture to a simmer and cook for about 1 hour or until it thickens to a jam-like consistency. Stir occasionally to prevent it from sticking to the bottom of the pot.
Step Four
Remove the pot from the heat. Test the jam by placing a small amount on a chilled plate. If it sets and doesn’t run, it is ready. If not, return the pot to the heat and cook for a further 10 minutes before testing again.
Step Five
When the jam is ready, carefully remove the spices with a spoon. Pour the jam into sterilised jars and seal immediately. Let it cool before storing. This jam can be stored in a dark, cool place for up to 1 year.
