What You’ll Need
- 2 cups all-purpose flour
- 1/3 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cut into pieces
- 2/3 cup whole milk
- 1/2 teaspoon vanilla extract
- 1 cup fresh apricots, pitted and chopped
- Zest of one lemon
- 1 tablespoon lemon juice
- 1/4 cup apricot jam
- 1/4 cup icing sugar for dusting
Method
Step One
Preheat the oven to 200 degrees Celsius (392 degrees Fahrenheit). Line a baking sheet with parchment paper, then set it aside.
Step Two
In a large bowl, combine 2 cups all-purpose flour, 1/3 cup granulated sugar, 1 tablespoon baking powder, and 1/2 teaspoon salt. Stir until the dry ingredients are well mixed.
Step Three
Add the 1/2 cup of cold unsalted butter pieces to the mix. Use your fingers to combine the butter with the dry ingredients until the mixture resembles coarse sand.
Step Four
Pour in the 2/3 cup of whole milk and the 1/2 teaspoon of vanilla extract. Stir well to combine, but don’t overmix, as this could toughen the dough.
