What You’ll Need

  • 1 cup Gac fruit pulp
  • 2 tablespoons lemon juice
  • 1 1/2 cups granulated sugar
  • 4 1/2 cups water
  • 1/2 cup cold water
  • 2 tablespoons agar-agar powder
  • Fresh fruit for garnish
  • 6 individual dessert cups

Method

Step One

Start by extracting the pulp from the Gac fruit. You’ll need about a cup of pulp. If you can’t find fresh Gac fruit, you can use canned pulp as well.

Step Two

In a large saucepan, combine the Gac fruit pulp, lemon juice, granulated sugar, and 4 1/2 cups of water. Stir this mixture over medium heat until the sugar has fully dissolved.

Step Three

While your fruit mixture is heating, take 1/2 cup of cold water and sprinkle the agar-agar powder over it. Allow the agar-agar to soak up the water for a few minutes until it becomes gel-like.

Step Four

Navigate back to your fruit mixture and bring it to a boil. Once boiling, reduce the heat and allow it to simmer for about 10 minutes. This will help draw out the flavor and color from the Gac fruit pulp.

Step Five

After simmering the fruit mixture, add in the soaked agar-agar. Stir well to combine and ensure that the agar-agar is completely dissolved. Continue to simmer this mixture for another 10 minutes, stirring occasionally.

Step Six

Once your jelly mixture is well cooked, turn off the heat and allow it to cool slightly.

Step Seven

While the mixture is cooling, find individual dessert cups and pour the mixture into them. These will act as your molds. Refrigerate for at least 4 hours, or until the jelly has completely set.

Step Eight

When you’re ready to serve, garnish each jelly dessert with fresh fruit. Enjoy your Gac fruit jelly dessert!
