What You’ll Need

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 8-ounce blocks cream cheese, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup sour cream
  • 1 teaspoon fine lemon zest
  • 1/4 cup all-purpose flour
  • 1 1/2 cups Nance fruit (yellow cherries), pitted
  • 1/2 cup Nance fruit syrup (from canned Nance)

Method

Step One

Preheat oven to 325°F (163°C). Grease a 9-inch springform pan. Mix the graham cracker crumbs, melted butter, and 1/4 cup sugar together in a medium bowl. Press the mixture into the bottom of the prepared pan. Bake for 10 minutes then remove from the oven to cool.

Step Two

In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add 1 cup sugar, and mix until fully incorporated. Then, add eggs one at a time, beating thoroughly after each addition. Add the vanilla extract and sour cream, mixing until just combined.

Step Three

On a low speed, add the lemon zest and flour to the cream cheese mixture. Beat until just combined. Be careful not to over-mix, as this can cause the cheesecake to crack.

Step Four

Pour half of the cream cheese mixture over the pre-baked crust. Spread half of the Nance fruit over the top of the mixture, then pour the remaining cream cheese mixture on top. Finally, scatter the remaining Nance fruit evenly over the top.

Step Five

Place the springform pan on a baking sheet and bake for 1 hour, or until the center of the cheesecake is set and the top is lightly browned.

Step Six

Remove the cheesecake from the oven and let it cool in the pan for 10 minutes. Using a knife, loosen the edges of the cheesecake from the sides of the pan. Cool the cheesecake completely at room temperature, then refrigerate it for at least 4 hours before serving.

Step Seven

Before serving, pour the Nance fruit syrup over the top of the cheesecake. Cut into slices and serve chilled.
