What You’ll Need

  • 2 cups fresh or canned jackfruit, drained and chopped
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 large tomato, chopped
  • 1 green chili, slit lengthwise
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 2 cups coconut milk
  • 1 tablespoon freshly chopped cilantro for garnish

Method

Step One

Heat up 2 tablespoons of vegetable oil in a large pan. Then add a finely chopped large onion and sauté until it turns a golden brown color.

Step Two

Add 2 cloves of minced garlic and 1 tablespoon of minced fresh ginger to the pan. Stir everything well and continue to sauté until the raw smell of the garlic and ginger goes away.

Step Three

Next, add a chopped large tomato and a slit green chili to the pan. Cook until the tomatoes start breaking down and become softened.

Step Four

Now it’s time to add the spices. Sprinkle 1 teaspoon of turmeric powder, 1 teaspoon of cumin powder, 1 teaspoon of coriander powder, 1 teaspoon of garam masala, and 1/2 teaspoon of red chili powder over the mixture in the pan. Stir well to combine.

Step Five

Add the chopped jackfruit to the pan. Stir well to ensure each piece of jackfruit is coated with the spices and other ingredients. Add salt to taste. Continue to cook for a few minutes until the jackfruit starts to soften and blend with the spices.

Step Six

Pour 2 cups of coconut milk into the pan. Stir well, and then lower the heat. Allow the curry to simmer for about 20 minutes, or until the jackfruit is tender and the flavors have melded together.

Step Seven

Check the taste and adjust the salt or spices if necessary. Turn off the heat, and then garnish the curry with 1 tablespoon of freshly chopped cilantro. Your delicious Jackfruit Curry is ready to be served!
