What You’ll Need
- 2 cans (20 oz each) young green jackfruit in water
- 1/4 cup olive oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 cup vegetable broth
- 2 tablespoons soy sauce
- 2 teaspoons smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 cup BBQ sauce
Method
Step One
Begin by draining and rinsing the jackfruit cans. Remove any seeds or cores from the fruit. Once completed, chop the jackfruit into smaller pieces. This will make them resemble the texture of pulled pork.
Step Two
Heat the olive oil in a large pan over medium heat. Once heated, add the chopped onion and minced garlic. Cook these ingredients until the onion becomes translucent.
Step Three
Now, add the chopped jackfruit to the pan with the onions and garlic. Stir everything together to ensure the flavours mix well. Continue to cook the jackfruit until it begins to break down and resemble the consistency of pulled pork.
Step Four
Add the vegetable broth, soy sauce, smoked paprika, ground cumin, black pepper, and cayenne pepper to the pan. Mix these spices and liquids with the jackfruit and onions, ensuring everything is well coated in the seasoning. Allow the jackfruit mixture to simmer for about 20 to 30 minutes.
Step Five
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Once the jackfruit mixture has absorbed most of the broth, spread it out evenly on the prepared baking sheet.
Step Six
Bake the jackfruit mixture in the preheated oven for about 20 minutes or until it becomes golden brown and crispy on some of the edges.
Step Seven
Remove the jackfruit mixture from the oven and toss it in the BBQ sauce. Return the sauced jackfruit to the oven and bake for an additional 10 minutes or until the sauce is sticky and has started to caramelize on the jackfruit.
Step Eight
Allow the jackfruit “ribs” to cool for about 5 minutes before serving. Enjoy with extra BBQ sauce or your favourite vegan side dishes. The jackfruit “ribs” should have a similar texture to traditional pork ribs, but with a delicious vegan twist!
