What You’ll Need

  • 1 cup of goji berries
  • 2 cups of coconut flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 1/2 cups almond milk
  • 1/4 cup coconut oil, melted
  • Syrup and fresh fruit, for serving
  • Extra coconut oil, for griddle

Method

Step One

Firstly, start by soaking your goji berries in water for about 10-15 minutes to make them tender. After they have softened, drain off the excess water and set them aside.

Step Two

Next, in a large mixing bowl, combine the coconut flour, baking powder, salt and sugar. Stir until these dry ingredients are well mixed.

Step Three

In another large bowl, whisk together the vanilla extract, large eggs, almond milk and melted coconut oil. Keep mixing until the batter is smooth and there are no lumps left.

Step Four
