The Influence Behind the Recipe

This delightful dish is inspired by my own take on the classic Spanish Paella, but it also aligns closely with the vegan recipes championed by Jamie Oliver. Through personal experiences and an appreciation for diverse cultures, I’ve learned the beauty of transforming a classic recipe into a unique dish that cater to various dietary preferences while maintaining its original essence.

I often serve this Vegan Mixed Paella alongside my homemade beetroot gazpacho—a refreshing and vibrant combination, making it the perfect meal for those balmy Miami evenings. For those who crave a taste of the ocean, I suggest pairing it with a chilled glass of white wine and some

  • 2 tablespoons olive oil
  • 1 large yellow onion, finely chopped
  • 4 cloves of garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 3 medium tomatoes, finely chopped
  • 1 1/2 cups Arborio rice
  • 1/2 cup white wine
  • 4 cups vegetable broth
  • 1 cup frozen green peas
  • 1 can artichoke hearts, drained and quartered
  • 8 ounces of vegan chorizo, sliced
  • 1/2 teaspoon saffron threads, soaked in a few tablespoons of hot water
  • 1 teaspoon smoked paprika
  • 1 teaspoon turmeric
  • Salt and pepper to taste
  • 1/2 cup chopped fresh parsley
  • 1 lemon, sliced into wedges for garnish

Method

Step One

Start by heating the olive oil in a large paella pan over medium heat. Once the oil is heated, add the finely chopped yellow onion and sauté until it becomes translucent.

Step Two

Next, proceed to add the minced garlic, chopped red, yellow and green bell peppers to the pan. Cook the mixture until the vegetables soften, which should take about 5 minutes.

Step Three

Now add the finely chopped tomatoes to the pan and stir well to combine. Cook this mixture until the tomatoes are broken down and the mixture is somewhat sauce-like.

Step Four

It’s time to add the Arborio rice! Stir it into the vegetable mixture, making sure all the grains are well coated. Let it cook for a couple of minutes then pour in the white wine.

Step Five

After a minute or two, which will allow the wine to mostly evaporate, pour in the vegetable broth, the frozen green peas, quartered artichoke hearts, sliced vegan chorizo, saffron threads with the soaking water, smoked paprika and turmeric. Stir everything together and season with salt and pepper according to your taste.

Step Six

Let the paella simmer gently on medium-low heat for 30 to 40 minutes. You want all the flavors to meld together and the rice to be cooked thoroughly. Add a bit more vegetable broth or water if the mixture becomes too dry.

Step Seven

Finally, touch up the dish with a sprinkling of freshly chopped parsley. Serve hot with lemon wedges on the side for guests to add according to their preference. Enjoy your Vegan Mixed Paella!
