When winter winds whistle down the Rockies, there’s one dish I turn to time and again: the delectable Roasted Pork Loin with Ximenia Glaze. This recipe masterfully combines a tantalizing mix of flavors to create a dish that not only warms the body but also delights the palate. Who knew that a simple fruit from the African savannah could transform a succulent roasted pork loin into a culinary masterpiece?
Harmony of Flavors
I love how the exotic, slightly tart flavor of the ximenia jam harmonizes with the robust, meaty flavor of the pork loin. The addition of Dijon mustard and aromatic minced garlic offers a gentle heat that enhances the flavor complexity. Thyme and rosemary shine through, recalling cool alpine meadows, while olive oil keeps everything moist and succulent. A simple finishing touch of salt and pepper ensures that the natural pork flavors genuinely stand out.
Health Benefits and Pairings
Not just delicious, this Roasted Pork Loin with Ximenia Glaze is also a nutrition-packed choice. Pork is a great source of protein and provides important vitamins and minerals source. Meanwhile, ximenia fruit is rich in Vitamin C and its oil is known for its anti-aging properties source. So, not only will you be satiating your taste buds with this mouthwatering meal, you’ll be contributing towards a healthier lifestyle.

What You’ll Need
- 3 pounds boneless pork loin roast
- 1 cup ximenia jam
- 2 tablespoons Dijon mustard
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary leaves, finely chopped
- 1 tablespoon fresh thyme leaves, finely chopped
- 2 tablespoons olive oil
- Salt and freshly ground black pepper to taste
Method
Step One
Preheat your oven to 350 degrees F (175 degrees C). While you wait for the oven to heat up, season the pork loin roast with salt and freshly ground black pepper to taste.
Step Two
Take a large skillet and heat 2 tablespoons of olive oil over medium heat. Once hot, add the seasoned pork loin roast to the skillet and brown on all sides. This will take about 10 minutes overall. Once browned, remove the roast from skillet and place it in a roasting pan.
Step Three
In a small bowl, combine the ximenia jam, Dijon mustard, minced garlic, chopped rosemary and thyme. Mix well to form the glaze.
Step Four
Rub the glaze all over the pork roast, ensuring all sides are covered. Make sure to reserve a little glaze for basting while the pork loin roast is in the oven.
Step Five
Place the roasting pan in the preheated oven and roast for about 1 hour, or until the internal temperature reaches 145 degrees F (63 degrees C) as measured with a meat thermometer. Make sure to baste with the reserved glaze halfway through roasting.
Step Six
Once the pork loin roast is done, remove it from the oven and let it rest for 10 minutes before carving. This allows the juices to redistribute throughout the roast. Slice into thin pieces, serve and enjoy your Roasted Pork Loin with Ximenia Glaze.
