  • 2 tablespoons of lemon juice
  • 1 teaspoon of pectin
  • 1/2 teaspoon of unsalted butter

Method

Step One

Begin by washing your star apples thoroughly. Cut them into halves and gently scoop out the flesh, ensuring you discard any seeds. Measure out 2 cups of the flesh and set aside.

Step Two

In a medium-sized, non-reactive saucepan, combine the star apple flesh, granulated sugar, and water. Turn the heat on to medium and keep stirring until the sugar is completely dissolved.

Step Three

Add the lemon juice to the mixture in the saucepan. Continue to stir and cook for about 10 minutes or until the star apple flesh becomes soft and pulpy.

Step Four

Once the star apple becomes soft, sprinkle the pectin over the mixture. Stir thoroughly to make sure the pectin is fully dissolved. Bring the mixture to a boil, stirring constantly to prevent it from scorching.

Step Five

Once the mixture starts boiling, add the unsalted butter. Continue to boil for another minute or so, making sure to keep stirring. The butter will help reduce any foam that forms on the top of the mixture.

Step Six

After boiling for a minute with the butter, reduce the heat and let the mixture simmer for about 15 minutes or until it reaches your desired consistency.

Step Seven

Remove the pan from the heat and let the jam cool completely. Once it’s cool, you can use it immediately or transfer it to a sterilized jar for storage. Your star apple jam is now ready to enjoy!
