What You’ll Need

  • 1 cup of all-purpose flour
  • 1/2 cup of whole wheat flour
  • 1 tsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 tsp of salt
  • 1 tsp of ground cinnamon
  • 1/2 cup of granulated sugar
  • 1/4 cup of brown sugar
  • 1 large egg
  • 1 cup of Mamey pulp, mashed
  • 1/2 cup of grated apple
  • 1/3 cup of vegetable oil
  • 1 tsp of pure vanilla extract
  • 1/2 cup of chopped nuts (optional)
ALLERGENS: all-purpose flour, whole wheat flour, egg, vegetable oil, nuts

Method

Step One

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Prepare a muffin tin by lining it with paper muffin cups, or by greasing each section with a bit of vegetable oil.

Step Two

In a large bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and ground cinnamon. Mix until all the dry ingredients are well-incorporated.

Step Three

In a separate bowl, mix together the granulated sugar and brown sugar. Add in the large egg and whisk until the sugars are fully dissolved and the mixture takes on a light, frothy texture.

Step Four

To the sugar and egg mixture, add in the mashed Mamey pulp, grated apple, vegetable oil, and pure vanilla extract. Stir until the ingredients are well mixed and the mixture is smooth.

Step Five

Gradually add the wet ingredient mixture into the bowl with the dry ingredients. Stir gently until the batter comes together. Avoid overmixing, as this could result in tough muffins.

Step Six

Optional: Fold in the chopped nuts of your choosing to the batter if preferred, then evenly distribute the batter into the prepared muffin tin, filling each cup about two-thirds of the way full.

Step Seven

Bake in the preheated oven for approximately 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step Eight
