What You’ll Need

  • 6 ripe plantains
  • 3 ripe bologis (star apples)
  • 18 wooden skewers
  • 1 cup brown sugar
  • 1/2 cup butter, melted
  • 2 tablespoons cinnamon
  • 1 teaspoon nutmeg
  • 2 tablespoons honey
ALLERGENS: butter

Method

Step One

Peel and slice both the plantains and the bologis. Your slices should be about 1 inch thick. Set them aside until you’re ready to use them.

Step Two

Preheat your grill to medium heat.

Step Three

Take your wooden skewers and thread the plantain and bologi slices onto them, alternating between the two. Each skewer should have an even number of slices.

Step Four

In a small bowl, combine the brown sugar, melted butter, cinnamon, and nutmeg. Stir until everything is well combined.

Step Five

Brush this brown sugar mixture over your skewered plantains and bologis, ensuring that each slice gets coated.

Step Six

Place your skewers onto the preheated grill. Cook for about 10 minutes, or until the plantains and bologis are soft and have begun to caramelise. Make sure to turn them occasionally for even cooking.

Step Seven

Remove your skewers from the grill and drizzle them generously with honey before serving.
