What You’ll Need

  • 1 cup quinoa
  • 2 cups water
  • 1/4 cup unsweetened almond milk
  • 1/4 cup pure açaí puree
  • 2 tablespoons honey
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 medium banana, sliced
  • 1/4 cup unsalted roasted almonds, chopped
  • 1/2 cup granola
  • 1/4 cup shredded coconut
ALLERGENS: Tree nuts (almonds, coconut), quinoa

Method

Step One

First, rinse the quinoa under cold water. Then, place it in a saucepan with the 2 cups of water.

Step Two

Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and let the quinoa simmer for about 15 minutes, or until the water is absorbed and the quinoa is fluffy.

Step Three

Pour the almond milk into the cooked quinoa. Stir in the açaí puree and honey until well mixed.

Step Four

Divide the quinoa mixture into four serving bowls.
