What You’ll Need
- 2 cups fresh blueberries
- 1 cup granulated sugar
- 2 cups heavy cream
- 1 cup whole milk
- 1 teaspoon pure vanilla extract
- 4 egg yolks
- 1/4 teaspoon salt
Method
Step One
Combine the blueberries and 1/2 cup granulated sugar in a medium saucepan. Heat over medium-low heat until the blueberries have softened and the sugar has dissolved. Use a blender or immersion blender to puree the blueberries until smooth. Allow the blueberry puree to cool.
Step Two
In a separate saucepan, combine the heavy cream, milk, vanilla extract, and remaining sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is heated, but do not let it reach a boil.
Step Three
In a separate bowl, whisk together the egg yolks. Slowly ladle some of the warm cream mixture into the egg yolks, whisking constantly to temper the eggs. Continue to slowly add the cream mixture to the egg yolks until about half of the cream mixture has been mixed in.
Step Four
Pour the egg mixture back into the saucepan with the remaining cream and add the salt. Heat over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon. Remove from heat and allow to cool.
Step Five
Mix the cooled blueberry puree into the cooled cream mixture. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
Step Six
Once the mixture has churned to a soft-serve consistency, transfer it to an airtight container and freeze until solid.
