Reminiscent of my Californian upbringing, where fresh produce is an essential part of our daily diet, these muffins hold a special place in my heart.

What You’ll Need

  • 2 cups of fresh mulberries
  • 2 cups of all-purpose flour
  • 1/2 cup of granulated sugar
  • 1 tbsp of baking powder
  • 1/2 tsp of baking soda
  • A pinch of salt
  • 1 cup of milk
  • 1/3 cup of vegetable oil
  • 2 large eggs
  • 1 tsp of vanilla extract
  • Zest of one orange (optional)

Method

Step One

First of all, preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Then, line a muffin tin with paper liners or grease it with a bit of oil.

Step Two

In a big bowl, combine the dry ingredients. This includes 2 cups of all-purpose flour, 1/2 cup of granulated sugar, 1 tbsp of baking powder, 1/2 tsp of baking soda, and a pinch of salt. Stir everything together until it’s well combined.

Step Three

In another bowl, whisk together the wet ingredients, which are 1 cup of milk, 1/3 cup of vegetable oil, 2 large eggs, and 1 tsp of vanilla extract. If using, add the zest of one orange at this phase as well for an additional flavor kick.

Step Four

Creating a small well in the center of your dry ingredients, slowly pour in the wet ingredients. Gently stir until just combined. Make sure to not over mix as this could lead to hard muffins.

Step Five

Add the 2 cups of fresh mulberries to the muffin batter. Don’t forget to gently fold them in to avoid breaking the berries.

Step Six

Equally divide the batter amongst the muffin tin. Each cup should be about 3/4 full.

Step Seven

Bake your muffins for about 15-20 minutes or until they are golden brown and a toothpick inserted into the center comes out clean.

Step Eight

After the muffins have baked, let them cool in the muffin tin for about 5 minutes before transferring them to a wire rack to finish cooling completely.
