What You’ll Need

  • 1.5 cups of couscous
  • 2 cups of boiling water
  • 1/2 cup of dried currants
  • 1/2 cup of freshly squeezed orange juice
  • Zest of one orange
  • 1/4 cup of chopped fresh mint
  • 1 tablespoon of olive oil
  • A pinch of salt
  • A dash of pepper

Method

Step One

Start by boiling the 2 cups of water in a pot. Once the water reaches boiling point, pour it over the 1.5 cups of couscous in a heatproof bowl. Cover the bowl with a cloth or lid and let the couscous sit for about 10 minutes so it can absorb the water completely.

Step Two

In a separate bowl, combine 1/2 cup of dried currants with 1/2 cup of freshly squeezed orange juice. Allow the currants to soak in the juice for the same time the couscous is absorbing the water. This will help plump up the currants and infuse them with the orange juice’s flavor.

Step Three

After 10 minutes has passed, fluff the couscous gently with a fork to separate the grains. Ensure it’s fully cooked and has fully absorbed all the boiling water.

Step Four

Add the soaked currants along with the juice, zest of one orange, 1 tablespoon of olive oil and 1/4 cup of chopped fresh mint to the couscous. Mix these ingredients into the couscous until evenly distributed.

Step Five

Finally, season your couscous with a pinch of salt and a dash of pepper. Toss everything together one last time to make sure the seasoning is well-distributed throughout. Taste the couscous and adjust the seasoning, if required.

Step Six

Your Mint and Currant Couscous is now ready to serve! This dish works great as a light lunch, the grain element in a salad, or as a side to your main course.
