As a Southern Belle who hails from the heat and heart of Charleston, South Carolina, the concept of a good meal involves the warmth of family, the comfort of tradition and the irresistible charm of good, honest flavours. That’s why I’ve grown so fond of our fruit-forward breakfast delight, the Plumcot and Ricotta Toast. A wisp of sweetness from the plumcots, a smooth creaminess from the ricotta, this breakfast toast is a marriage of flavours that warms up my Southern heart.

The Beauty in Simplicity

Often times, it’s the simplest recipes that hold the most delicious secrets, and I firmly believe that this toast embodies this statement to the T. It’s similar to other lovely recipes like Fig and Ricotta toast found on Bon Appétit, with a pleasant sweet and tangy contrast. It achieves an enviable balance between sophistication and straightforwardness, which reminds me of the culinary practices from my home town.

Nutrition Uncovered

While the combination of ricotta cheese and plumcots tastes heavenly, it’s also brimming with health benefits. Ricotta cheese is a great source of protein, and plumcots (a hybrid fruit that couples the best of plums and apricots) are rich in Vitamin C and plenty of essential dietary fibre. This toast is also topped with a generous sprinkle of almonds, ensuring a crunchy texture and doses of heart-healthy monounsaturated fats and valuable antioxidants.

So, not only do you have an easy-to-make breakfast fix with the Plumcot and Ricotta Toast, but you also have something nourishing and truly gourmet. A perfect culinary nod to my upbringing, you see.

A Perfect Pair

The Plumcot and Ricotta Toast is an absolute delight to have on its own, but it can work wonders when paired with the right dishes too. Imagine settling down for brunch with a side of golden, crispy hash browns, or perhaps, a simple avocado salad. And if you’re seeking a Southern twist, go for a side of creamy slow-cooker grits. Trust me, you’d be gearing up for a memorable brunch experience.

What You’ll Need

  • 12 slices of whole grain bread
  • 1.5 cups of fresh ricotta cheese
  • 6 medium plumcots, pitted and thinly sliced
  • 3 tablespoons of honey
  • 1.5 teaspoons of fresh mint, finely chopped
  • Zest of 2 lemons
  • 6 tablespoons of almond slices
  • Salt to taste
ALLERGENS: Wheat, dairy, almonds

Method

Step One

To start with, toast your slices of whole grain bread until they are golden brown and crispy. This can be done in a toaster or in the oven.

Step Two

Spread a generous layer of fresh ricotta cheese on each slice of toast. Ensure to spread it evenly across the slice, for a uniform taste.

Step Three

Arrange the thinly sliced plumcots on top of the ricotta cheese on each toast slice. You can either lay them flat or overlap slightly for a more appealing presentation.

Step Four

Drizzle each toast with honey. Do this carefully to ensure each slice gets an equal amount of honey.

Step Five

Sprinkle the finely chopped fresh mint on top of the plumcots. This will give the toast a nice fresh flavor contrast.

Step Six

Grate the zest of the lemons and sprinkle it over each of the toasts. This will add a refreshing citrus note to the toast.

Step Seven

Add almond slices on top of each toast for a crunchy texture. Try to spread them evenly so they toast nicely when served.

Step Eight

Finally, season with a little salt to taste. This will enhance all the flavors on the toast. Serve immediately and enjoy!
