What You’ll Need

  • 12 Japanese green ume (plums)
  • 2 cups granulated sugar
  • 3 cups vodka or distilled spirits (such as shochu)
  • 6 high ball glasses
  • 6 slices of lemon
  • Soda water, to top

Method

Step One

First, rinse the Japanese green ume (plums) under running water for a couple of minutes. Gently pat them dry using a clean towel. This will ensure any remnants or dust present on the plums are thoroughly cleaned.

Step Two

Take a sterilized glass jar with an airtight lid. Arrange the cleaned plums and granulated sugar in alternate layers. This helps to enhance the sweetness of the plums submerged in the jar.

Step Three

Pour the vodka or distilled spirits (such as shochu) into the jar ensuring that the plums and sugar are entirely submerged in it. Securely close the jar lid to prevent any air from entering into the jar.

Step Four

Once the jar is sealed, store it in a cool and dark place for at least three months. This process helps to infuse the flavor of plums and sugar into the spirits. The longer the plums are kept, the richer the flavor of the umeshu will be.

Step Five

After the stipulated time, strain the liquid from the jar and discard the plums. The umeshu can be served straightaway or stored in a cool place for future use.
