What You’ll Need

  • 2 cups of fresh Salal berries
  • 1 1/2 cups of whole milk
  • 1 1/2 cups of heavy cream
  • 3/4 cup of granulated sugar
  • 1 tablespoon of lemon juice
  • 5 egg yolks
  • 1 teaspoon of pure vanilla extract

Method

Step One

Begin by washing the fresh Salal berries thoroughly. Afterwards, add them to a saucepan along with granulated sugar and lemon juice. Cook this mix over medium heat, stirring occasionally until the berries soften and the sugar completely dissolves. This should generally take about 15 minutes. Once done, transfer the mix to a blender or food processor and puree till it is smooth. Set it aside to cool.

Step Two

In another saucepan, combine whole milk and heavy cream and heat the mixture over medium-low heat until it’s hot but not boiling. This process should take about 5 minutes.

Step Three

Meanwhile, in a separate bowl, whisk the egg yolks until they are creamy and light in color.

Step Four

Gradually add a cup of the hot milk and cream mixture into the whisked egg yolks while whisking constantly. This tempering prevents the egg yolks from cooking when introduced to the hot liquid. Once done, pour the egg yolk mixture back into the saucepan with the rest of the milk and cream combination.

Step Five

Cook this mixture over medium-low heat, stirring continuously until the mixture thickens and can coat the back of a spoon. Be cautious not to let the mix come to a boil.

Step Six

Remove from heat, and stir in the vanilla extract. Once this is done, gradually mix in the berry puree until it is fully incorporated. Strain the mixture through a fine-mesh sieve into a bowl to ensure smoothness and remove any potential lumps.

Step Seven

Allow the mix to cool at room temperature for a few minutes before covering it with plastic wrap. Ensure the plastic wrap touches the surface of the mix to prevent a skin from forming. Refrigerate for at least 2 hours or till the mix is completely cold.

Step Eight

Once chilled, churn this mixture in an ice cream maker according to the manufacturer’s instructions. When done, transfer the ice cream into a lidded container and freeze for at least 4 hours or until firm.

Step Nine

Remove the Salal Berry Ice Cream from the freezer a few minutes before you want to serve it to soften it up. Happy eating!
