My love for this recipe came about during a camping trip in the Rockies, when my partner Gordon and I were blessed to experience the strikingly beautiful Dragonfruit in its prime. What You’ll Need

  • 2 large dragonfruits
  • 1 cup of fresh strawberries
  • 1/2 cup of fresh raspberries
  • 1 cup of orange juice
  • 1/4 cup of honey
  • 1/2 cup of plain Greek yogurt
  • 2 tbs of fresh lime juice
  • 6 mint leaves for garnish (optional)

Method

Step One

First, prepare your fruits. Begin by cutting your 2 large dragonfruits into halves. Scoop out the fruit flesh and discard the skin. Next, clean your 1 cup of fresh strawberries and 1/2 cup of raspberries to remove any dirt or grit.

Step Two

Put your dragonfruit flesh, strawberries, and raspberries into a blender. Pour in your 1 cup of orange juice. Blend the mixture until it becomes a smooth puree.

Step Three

Once the mixture is smooth, add 1/4 cup of honey, 1/2 cup of Greek yogurt, and 2 tablespoons of fresh lime juice to the blender. Continue blending until everything is well mixed and the soup is silky smooth.

Step Four

Pour your dragonfruit soup into bowls. Cover them with cling film and chill in the fridge for at least 2 hours before serving. This chilling allows the flavors to develop and the soup to thicken slightly.

Step Five

When you’re ready to serve, remove the soup from the fridge. Give it a good stir to ensure that the flavors are well combined. If you wish, you can garnish each bowl with a fresh mint leaf before serving. Your chilled dragonfruit soup is ready to enjoy!
