What You’ll Need

  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup unsweetened applesauce
  • ¼ cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted and cooled
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups peeled and diced kiwifruit
  • ½ cup chopped walnuts (optional)
ALLERGENS: Gluten (in all-purpose flour), Egg, Milk, Tree Nuts (in walnuts, if used)

Method

Step One

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Grease a 12-cup muffin tin or line it with paper bake cups.

Step Two

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder and salt. Set this dry mix aside.

Step Three

In a separate bowl, mix together the unsweetened applesauce, milk, cooled melted butter, and egg. Stir in the vanilla extract.

Step Four

Add the wet ingredients to the dry ingredients. Stir the mixture until it is just combined. Be careful not to overmix as this can make the muffins tough.

Step Five

Gently fold in the diced kiwifruit and chopped walnuts (if using) into the batter.

Step Six

Scoop the batter into each muffin cup until about two-thirds full. You can use an ice cream scoop or two spoons for this.

Step Seven

Step Eight

Let the muffins cool in the tin for around 5 minutes. Then remove them from the tin and let them cool on a wire rack.
