What You’ll Need

  • 1 cup all-purpose flour
  • 1 cup milk
  • 4 large eggs
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 4 tablespoons unsalted butter
  • 2 medium peaches, sliced
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • Powdered sugar for garnish (optional)
  • Maple syrup for serving (optional)
ALLERGENS: milk, eggs, wheat, butter

Method

Step One

Preheat your oven to 425 degrees Fahrenheit. This hot temperature is necessary for creating the perfect fluffy texture for our baked peach pancake.

Step Two

In a large bowl, whisk together the all-purpose flour, milk, eggs, granulated sugar, vanilla extract and salt. Make sure all the ingredients are well combined, but don’t overmix.

Step Three

Put the unsalted butter in a cast-iron skillet or an oven-safe frying pan. Then set the skillet inside the preheating oven to melt the butter. Watch it closely so that it doesn’t burn!

Step Four

While the butter is melting, you can slice your peaches. Remember to remove the pit before slicing. You may peel the peach if you like, but it’s not necessary.

Step Five

Remove the skillet from the oven once the butter has melted. Then pour your pancake batter in the skillet, and arrange the peach slices on top.

Step Six

Put the skillet back in your preheated oven, and bake for 12-18 minutes. The pancake should puff up and turn a beautiful golden brown color.

Step Seven

While the pancake is baking, you can prepare the topping. Mix together the brown sugar and cinnamon.

Step Eight

Once the pancake is done baking, take it out of the oven and immediately sprinkle the cinnamon-brown sugar mixture on top. The heat from the pancake will melt the mixture into a delicious sweet glaze.

Step Nine

Serve right away, optionally dusted with powdered sugar and with maple syrup on the side. Enjoy your delicious baked peach pancake!
