One recipe that closes to my heart and I want to share with everyone is Breadfruit Pancakes. They are a delicious twist on the classic pancakes we all know and love. However, what sets them apart, is the breadfruit. This unique ingredient lends the pancakes a surprisingly delightful texture and a sweet, subtle, tropical flavor that truly is a celebration of my West Coast upbringing, with its bounty of fresh fruits, and Gujarati heritage, with its innovative approach towards incorporating fruits into various dishes.

Breadfruit Pancakes

The Magic of Breadfruit

The star in this recipe, breadfruit, is not only known for its rich, buttery taste but also the plethora of health benefits it offers. Packed with fiber, antioxidants and essential vitamins like Vitamin C, it’s a wonder fruit that aids digestion, boosts immunity and promotes cardiovascular health. It’s a brilliant addition to a dish that my family, especially my two sons, relish on Sunday mornings.

A Dish with a Global Appeal

These Breadfruit Pancakes are reminiscent of the Gujarati Puran Poli, a sweet flatbread filled with a lentil-jaggery mixture which shares a similar texture and sweetness with our breadfruit pancakes. Like Puran Poli, our recipe too carries an emotional token of family gatherings and shared laughter around the breakfast table.

I must mention that the Breadfruit Pancakes, topped off with a generous pour of maple syrup and a colourful medley of fresh fruits, pairs wonderfully well with a refreshing glass of Orange Sunrise Smoothie. The vibrant citrusy notes of the smoothie balance the rich, warm flavours of the pancakes, creating a breakfast ensemble that will leave you feeling satisfied and energized for the day ahead.

So, whether you are a pancake lover, a cooking enthusiast, or simply someone who loves to try new twists on familiar recipes, I am confident that you’ll find the Breadfruit Pancakes an intriguing beat from the usual tempo. Enjoy!

What You’ll Need

  • 2 cups of mashed ripe breadfruit
  • 1.5 cups of all-purpose flour
  • 3 tablespoons of granulated sugar
  • 1 tablespoon of baking powder
  • 1/2 teaspoon of salt
  • 2 large eggs
  • 1.5 cups of milk
  • 4 tablespoons of unsalted butter, melted
  • 1 teaspoon of vanilla extract
  • Additional butter for greasing the griddle/pan
  • Maple syrup and fresh fruits for topping
ALLERGENS: Wheat, Eggs, Milk

Method

Step One

Begin by mashing the ripe breadfruit until you have approximately 2 cups worth. Next, in a large mixing bowl, combine the mashed breadfruit with the all-purpose flour, granulated sugar, baking powder, and salt. Mix these dry ingredients until they are all evenly distributed throughout the mixture.

Step Two

In a separate bowl, crack open the large eggs and beat them lightly. Add the milk, melted unsalted butter, and vanilla extract to the eggs. Mix thoroughly until all the liquid ingredients are well combined.

Step Three

Gradually add the liquid mixture to the dry ingredients while stirring continuously. Mix until a batter is formed. The batter may be slightly lumpy, which is just fine. Just ensure that all the ingredients have been properly mixed in.

Step Four

Light a stove and place a griddle or pan on it. Grease the griddle or pan lightly with some additional butter and allow it to heat up. You can test whether it has heated up enough by dropping a small amount of batter onto it. If it sizzles, the griddle or pan is ready for the pancakes.

Step Five

Now scoop some batter onto the griddle or pan. Depending on how big you want your pancakes, you can adjust the size of the scoops. Cook each pancake until it’s golden brown on each side, which should take about 2-3 minutes per side.

Step Six

Once cooked, transfer the pancakes to a plate and repeat the process until all the batter is finished. You can serve the breadfruit pancakes with some maple syrup and fresh fruits as toppings for a delicious and hearty breakfast.
