Vanilla Glazed Donuts

What You’ll Need

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 large eggs
  • ½ cup granulated sugar
  • ½ cup whole milk
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon pure vanilla extract
  • ¼ cup Greek yogurt
  • 1 cup mixed fruit (like chopped strawberries, blueberries, and raspberries)
  • ½ cup confectioners’ sugar
  • 1 tablespoon whole milk
  • 1 teaspoon pure vanilla extract for the glaze

Method

Step One:

Start by preheating your oven to 425 degrees Fahrenheit. Then, grease a donut pan thoroughly with non-stick cooking spray.

Step Two:

In a medium-sized mixing bowl, combine the all-purpose flour, baking powder, and salt. Set this aside for later.

Step Three:

In a large mixing bowl, beat together the large eggs and granulated sugar. Then, slowly add in the whole milk, melted unsalted butter, and the pure vanilla extract. Stir well to combine.

Step Four:

To the large mixing bowl, add the Greek yogurt and mix until everything is thoroughly combined. Gradually add in the flour mixture that was set aside in step two, stirring until just combined.

Step Five:

Gently fold in the mixed fruit into the batter. Then, fill each donut hole about ¾ of the way full with the batter.

Step Six:

Bake the donuts in the preheated oven for about 10 to 12 minutes, or until a toothpick inserted into one of the donuts comes out clean.

Step Seven:

While the donuts are cooling, prepare the glaze by combining the confectioners’ sugar, 1 tablespoon of whole milk, and 1 teaspoon of the pure vanilla extract in a small bowl. Stir well until it’s smooth and all the sugar has dissolved.

Step Eight:

Once the donuts have cooled down a little, dip the top of each one in the glaze, allowing any excess to drip off before placing them back onto a cooling rack. Allow the glaze to set before serving.
