What You’ll Need

  • 1 1/2 cups of all-purpose flour
  • 3 1/2 teaspoons of baking powder
  • 1 teaspoon of salt
  • 1 tablespoon of white sugar
  • 1 1/4 cups of milk
  • 1 egg
  • 3 tablespoons of melted butter
  • 1/2 teaspoon of vanilla extract
  • 1 cup of fresh aratiles, mashed
  • Additional fresh aratiles for topping
  • Syrup for serving

Method

Step One

Start by sifting together the all-purpose flour, baking powder, salt, and white sugar in a large bowl.

Step Two

In a separate bowl, whisk together the milk, egg, melted butter and vanilla extract. Afterward, slowly add this liquid mixture to the flour mixture, stirring constantly until you achieve a smooth batter.

Step Three

Stir in the mashed aratiles into the batter. Mix well until the aratiles blend completely with the batter.

Step Four

Preheat a skillet or a griddle over medium high heat. Lightly grease the surface with a bit of butter or non-stick cooking spray.

Step Five

For each pancake, pour about 1/4 cup of batter onto the preheated surface. Spread out the batter slightly with the back of a spoon, if needed, to create a circular shape.

Step Six

Cook each pancake until you see bubbles form on the surface, then flip and continue cooking until it turns golden brown. Repeat with the remaining batter.

Step Seven

Top each pancake with additional fresh aratiles. Serve hot with your favorite syrup.
