The Story Behind The Drink

Originating from Pacific islands, the Hala fruit, also known as the Pandanus, is an exotic addition to my recipe repertoire. It may not be as local as the bison burger or huckleberry pie that I often indulge in, but the Hala Fruit Juice is a recipe that I’ve grown to love for its robust and distinct taste, similar to that of a ripe mango or a sweet pineapple.

What You’ll Need

  • 1-2 ripe Hala fruits
  • 2 cups water
  • 1/2 cup freshly squeezed lime juice
  • 1 1/2 cups white sugar
  • 6 cups chilled club soda
  • Ice cubes

Method

Step One

Firstly, peel the ripe Hala fruits and separate the hard inner core from the orange segments. Use a knife to cut each segment in half so that it is easier to extract the juice, then set them aside.

Step Two

In a large pot, bring the 2 cups of water to the boil. Add the Hala fruit segments and reduce the heat, simmering for approximately 15 minutes until the fruit becomes soft. Once they are softened, use a spoon to mash the segments and extract as much juice as possible.

Step Three

Take out a sieve and place it over a large jug or bowl. Once the Hala fruit has cooled slightly, pour the mixture into the sieve. Using the back of the spoon, press the fruit to get every last bit of juice out. Allow the juice to cool completely before moving on to the next step.

Step Four

In the jug with the Hala fruit juice, add your 1/2 cup of lime juice and 1 1/2 cups of white sugar. Stir until the sugar is completely dissolved.

Step Five

Finally, add your 6 cups of chilled club soda and stir again. Once the juice is well mixed, pour it over ice cubes. Your Hala fruit Juice is ready to be served! Enjoy it chilled.
