When I first stumbled upon the concept of Marshmallow Brownies, I was a bit skeptical. The combination of rich chocolate, gooey marshmallows, and fresh fruits like strawberries and bananas seemed almost too decadent to be healthy. But then I remembered my roots in sunny California and our love for putting a fresh, health-conscious spin on comfort foods. While Marshmallow Brownies might sound indulgent, incorporating fruits adds a surprising twist that balances the sweetness while sneaking in some nutritional benefits.

Marshmallow Brownies

A Healthier Indulgence

One of the reasons I adore this recipe is its unique way of combining indulgence with health benefits. The strawberries and bananas bring antioxidants, vitamins, and a burst of natural sweetness that complements the chocolate perfectly. They are rich in Vitamin C, fiber, and potassium which are essential for good health and can help boost your immune system and keep you energized. This recipe takes the guilt out of enjoying brownies by adding a serving of fruits, making it somewhat similar to chocolate-dipped strawberries—only more exciting!

California Comfort with a Twist

Growing up in California, my culinary journey has always been about balance. Combining the classic comfort of gooey brownies with the freshness of our beloved produce is a game-changer. The underlying hint of vanilla and slight crunch from the mini marshmallows brings every bite to life, making it reminiscent of a s’mores experience but elevated and made more sophisticated.

If you’re planning a cozy family night, these Marshmallow Brownies pair delightfully with a glass of red wine or even a simple cup of green tea. Looking for something more robust? Serve them alongside roasted nuts or a light, fresh salad to round out the meal. They also make a fantastic centerpiece for a weekend brunch or a picnic basket treat, matching well with dishes like quinoa salad or a simple fruit salad.

Rediscover the joy of a classic brownie with a fresh, fruity twist. Your taste buds—and your body—will thank you.

What You’ll Need

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows
  • 1/2 cup chopped strawberries
  • 1/2 cup sliced bananas
ALLERGENS: Soy, Dairy, Eggs, Gluten

Method

Step One

Preheat your oven to 350°F (175°C). Grease and line a 9×9 inch baking pan with parchment paper, leaving an overhang on the sides to easily lift the brownies out later.

Step Two

In a microwave-safe bowl, melt the semi-sweet chocolate chips and unsalted butter together in 30-second increments, stirring after each until smooth and fully melted. Allow the mixture to cool slightly.

Step Three

In a large mixing bowl, whisk together the granulated sugar, eggs, and vanilla extract until well combined and slightly frothy.

Step Four

Gradually add the melted chocolate and butter mixture to the sugar and eggs mixture, stirring constantly until well blended and smooth.

Step Five

In a separate bowl, sift together the all-purpose flour, unsweetened cocoa powder, baking powder, and salt. Gradually fold this dry mixture into the wet mixture, stirring until just combined and no streaks of flour remain.

Step Six

Gently fold in the mini marshmallows, chopped strawberries, and sliced bananas until evenly distributed throughout the batter.

Step Seven

Pour the batter into the prepared baking pan and spread it out evenly with a spatula.

Step Eight

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs (but no raw batter).

Step Nine

Remove the pan from the oven and allow the brownies to cool completely in the pan before lifting them out using the parchment paper overhang. Cut into squares and serve. Enjoy!
