Red Onion and Feta Pizza

I must say, there’s something uniquely delightful about the Red Onion and Feta Pizza that keeps me coming back for more. Born and raised in the rugged Rocky Mountains of Colorado, I’ve always had a penchant for hearty, earthy dishes. But every now and then, I crave the vibrant, fresh flavors that only a well-crafted vegetable-centric recipe can provide. That’s where this pizza comes into play.

A Symphony of Flavors

The combination of caramelized red onions and tangy feta cheese creates a harmonious medley of sweet and savory notes that dance on your palate. When topped on a perfectly baked crust, it’s nothing short of culinary magic. The mozzarella provides that melt-in-your-mouth quality, while the dried oregano and red pepper flakes add the perfect amount of warmth and herbaceousness. It’s a simple recipe, yet it delivers a complexity of flavors that rivals any gourmet dish.

Health Benefits Galore

Not only is the Red Onion and Feta Pizza deliciously irresistible, but it’s also packed with nutritional benefits. Red onions are rich in antioxidants, particularly quercetin, which is known for its anti-inflammatory properties. Feta cheese, though indulgent, is lower in fat and calories compared to many other cheeses, making it a healthier choice. Plus, the olive oil and balsamic vinegar add heart-healthy fats and a touch of sophistication to the dish.

Given my love for the great outdoors and wholesome mountain fare, this recipe stands out as both comforting and nutritious. It’s perfect for a cozy night in with Gordon after a long day of hiking or fishing. The fresh basil leaves, optional but highly recommended, provide a refreshing finish that ties all the flavors together beautifully.

In terms of pairing, this pizza goes wonderfully with a light, crisp salad or even a bowl of warm, hearty soup. If you enjoy veggie-based recipes, you might also love our Spinach and Artichoke Flatbread or the classic Margherita Pizza. Each offers its own unique twist on fresh ingredients and robust flavors, much like the Red Onion and Feta Pizza.

This recipe has become a household favorite, not just for its taste but also for the joy it brings to our kitchen and our table. I hope it brings the same to yours.

What You’ll Need

  • 1 large red onion
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 pre-made pizza dough (enough for a 12-inch pizza)
  • 1/2 cup tomato sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1 cup crumbled feta cheese
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • Fresh basil leaves (optional, for garnish)
ALLERGENS: Milk, Wheat

Method

Step One

Preheat your oven to 475°F (245°C). If you’re using a pizza stone, place it in the oven while it preheats.

Step Two

Slice the large red onion into thin rings. Heat 1 tablespoon of olive oil in a skillet over medium heat and cook the red onion until it becomes soft and caramelized, about 10 minutes. Add 1 tablespoon of balsamic vinegar and continue to cook for another 2 minutes. Remove from heat and set aside.

Step Three

Roll out the pre-made pizza dough on a floured surface to form a 12-inch circle. Transfer the dough onto a pizza peel lined with parchment paper, or directly onto the preheated pizza stone.

Step Four

Spread 1/2 cup of tomato sauce evenly over the pizza dough, leaving a small border around the edges for the crust.

Step Five

Sprinkle 1 1/2 cups of shredded mozzarella cheese evenly over the tomato sauce. Then, scatter 1 cup of crumbled feta cheese over the mozzarella.

Step Six

Evenly distribute the caramelized red onions over the cheese layer. Sprinkle 1/4 teaspoon of red pepper flakes and 1 teaspoon of dried oregano over the top.

Step Seven

Transfer the pizza to the preheated oven (using the pizza peel if necessary) and bake for about 12-15 minutes, or until the crust is golden and the cheese is bubbling and slightly browned.

Step Eight

Remove the pizza from the oven. If desired, garnish with fresh basil leaves. Slice and serve immediately. Enjoy your Red Onion and Feta Pizza!
