What You’ll Need
- 6 John Dory fillets
- Salt and freshly ground black pepper for seasoning
- 2 tablespoons olive oil
- 1 large onion, finely sliced
- 4 garlic cloves, minced
- 1 cup white wine
- 1 and 1/2 pounds ripe tomatoes, finely chopped
- 2 tablespoons tomato paste
- 1 tablespoon white sugar
- 1/2 cup fresh basil leaves, chopped
- 1 tablespoon balsamic vinegar
Method
Step One
Start by preheating your oven to 375 degrees Fahrenheit (190 degrees Celsius). Season the John Dory fillets with salt and freshly ground black pepper.
Step Two
Heat the olive oil in a large oven-safe skillet over medium heat. Add the finely sliced onion and cook until it becomes translucent. Add the minced garlic and continue to cook for a couple of minutes.
