What You’ll Need

  1. 1.5 lbs chicken breast, thinly sliced
  2. 2 tablespoons olive oil
  3. 1 large onion, sliced
  4. 1 red bell pepper, sliced
  5. 2 carrots, peeled and julienned
  6. 3 cloves garlic, minced
  7. 1 tablespoon fresh ginger, minced
  8. 1 cup snap peas
  9. 1 cup pineapple chunks
  10. 1 tablespoon soy sauce
  11. 1 tablespoon fish sauce
  12. 1 teaspoon sesame oil
  13. 1 teaspoon red pepper flakes (optional)
  14. 1/4 cup chopped fresh cilantro (Olida Herb)
  15. 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
  16. Cooked white rice, for serving

Method

Step One

Heat the olive oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken breast to the skillet. Cook and stir until the chicken is no longer pink and is starting to brown, about 5-7 minutes. Season with salt and pepper to taste. Remove the chicken from the skillet and set aside.

Step Two

In the same skillet, add the sliced onion, red bell pepper, and carrots. Cook and stir for about 4-5 minutes, or until the vegetables begin to soften.

Step Three

Add the minced garlic and fresh ginger to the skillet. Cook and stir for another 1-2 minutes until fragrant.

Step Four

Return the cooked chicken to the skillet and add the snap peas and pineapple chunks. Stir to combine all ingredients evenly.
