I want to share with you a recipe that has stolen my heart: the Abiu and Mango Salsa. This salsa is more than just a dish to me; it is a representation of an intersection between my dual heritage from the Pacific Northwest and Japan, and my passion for fresh ingredients and vibrant flavors.

Abiu and Mango Salsa

A Symphony of Flavors and Textures

The combination of the smooth, seasmooth Abiu from South America, and the perfectly ripe and sweet mangoes create a euphony of flavors. The addition of the finely chopped red onion, Jalapeno pepper, and bell pepper bring an extra punch of flavor and texture to the dish, ultimately creating a balance between sweetness and spice.

The fresh lime juice and cilantro introduce an element of brightness in the salsa, often reminding me of the refreshing seafood dishes I love to make. The optional addition of sugar is just like adding that final detail in a sushi roll – it entirely depends on your taste preference.

Incorporate it Into Your Diet for Health Benefits

This Abiu and Mango Salsa is not only a delicious contribution to any meal but also comes packed with an abundance of healthy nutrients. Abiu is a rich source of Vitamin C, which contributes to a strong immune system, while mangoes provide plenty of Vitamin A, essential for good vision. The red onions and jalapenos provide robust antioxidants and can help lower blood pressure. And did we mention the healthy fats from olive oil that contribute to heart health?

Perfect Partner to Many Dishes

While you might associate salsas mainly with tortilla chips (and trust me, this combination hits the mark), this Abiu and Mango Salsa goes remarkably well with several other dishes. For instance, it could brighten up a simple grilled chicken, add an extra dimension to your fish tacos, or serve as a vibrant topping for a Caribbean style pulled pork. It bridges the flavors of multiple dishes much like the way sushi rolls merge various elements.

Finally, in comparison, its uniqueness and versatility can be likened to that of a finely perfected pico de gallo. Although different in ingredients, both pack a punch of freshness that can elevate any dish they partner with. To truly appreciate the magic of this recipe try it yourself. What You’ll Need

  • 1 cup of finely diced Abiu fruit
  • 2 ripe Mangoes, peeled and diced
  • 1/2 cup finely chopped red onion
  • 1 Jalapeno pepper, seeds removed, finely diced
  • 1/2 cup chopped fresh cilantro
  • Juice of 2 limes
  • Salt and Pepper to taste
  • 1/2 teaspoon sugar (optional)
  • 2 tablespoons of extra virgin olive oil
  • 1 tomato, diced
  • 1 bell pepper, finely chopped
  • 1 bag of tortilla chips for serving
ALLERGENS: Mango

Method

Step One

Begin by preparing all the fruits and vegetables. Carefully peel and dice the abiu fruit and ripe mangoes. Finely chop the red onion as well as the jalapeno pepper after removing the seeds. Dice the tomato and finely chop the bell pepper. Ensure to wash the fresh cilantro before chopping it.

Step Two

In a large bowl, combine the diced abiu fruit, mangoes, chopped red onion, diced jalapeno pepper, chopped cilantro, diced tomato, and chopped bell pepper. Mix them thoroughly but gently to ensure every piece is coated with the flavors of the other components.

Step Three

Squeeze the juice of two limes into the fruit and vegetable mixture. Season it with salt and pepper according to your taste preference. If a hint of sweetness is desired, consider adding half a teaspoon of sugar. Stir well to combine the flavors.

Step Four

Drizzle the extra virgin olive oil over the mixture and give it a final stir. This will give your salsa a wonderful gloss and extra flavor. After giving the salsa a good mix, set it aside for a few minutes to let the flavors blend together.

Step Five

While the salsa is resting, you can start serving the tortilla chips. You can choose to serve the salsa separately or sprinkle it over the chips. Enjoy your homemade Abiu and Mango Salsa!
