What You’ll Need

  • 3 ripe Abiu fruits
  • 6 ripe Passion fruits
  • 1/4 cup of freshly squeezed orange juice
  • 2 tablespoons of honey
  • 1/2 teaspoon of vanilla extract
  • Mint leaves for garnish

Method

Step One

Begin by preparing your fruits. For the Abiu fruits, cut them in half and carefully remove the pulp using a spoon. Ensure that you get as much pulp as possible, but try not to damage the skin. Ensure to remove any seeds found in the pulp. For the Passion fruits, cut them in half as well and spoon out the insides into a separate bowl. Make sure you get both the seeds and the juice.

Step Two

Next, strain the passion fruit pulp through a sieve in order to extract as much juice as possible. Discard the seeds and solid bits. Combine the strained passion fruit juice with the Abiu fruit pulp in a large bowl.

Step Three

In a separate container, stir together the freshly squeezed orange juice, honey and vanilla extract. Mix this thoroughly until the honey is completely dissolved and incorporated.

Step Four

Pour the orange juice mixture over the fruit pulp. Mix everything gently but thoroughly until the fruits are well coated with the juice mix. Make sure to stir slowly so as not to damage the delicate Abiu fruit pulp.

Step Five

Refrigerate the fruit salad for at least 1 hour before serving. This will allow the flavors to meld together and for the salad to be served chilled.

Step Six

When ready to serve, divide the fruit salad amongst serving bowls and garnish with fresh mint leaves. This Abiu and Passion Fruit Salad is best served fresh and cold, enjoy!
