What You’ll Need

  • 3 cups of Abiu pulp
  • 1 cup of crushed Pineapple
  • 2 tablespoons of Pineapple juice
  • 3 cups of granulated sugar
  • 1 tablespoon of lemon juice
  • 1 packet of pectin (approximately 1.75 ounce)
  • 1/2 teaspoon of butter

Method

Step One

Prepare your ingredients by removing the Abiu pulp from the fruit and crushing a fresh pineapple. Measure out your remaining ingredients so they are ready to use.

Step Two

In a large bowl, add 3 cups of Abiu pulp, 1 cup of crushed pineapple and 2 tablespoons of pineapple juice. Mix the ingredients well until they are fully combined and set aside.

Step Three

In a large saucepan, combine the fruit mixture, 3 cups of granulated sugar, 1 tablespoon of lemon juice, and the packet of pectin. Stir everything together until it’s well-incorporated.

Step Four

Place the saucepan on the stove over medium heat, and add 1/2 teaspoon of butter. This will help reduce the amount of foam that forms on top of the jam during cooking.

Step Five

Carefully bring the mixture to a boil. Once it reaches a rolling boil, allow it to boil for one full minute, stirring occasionally to prevent it from sticking to the bottom of the saucepan.

Step Six

Once the boiling time is up, remove the saucepan from the heat. Let the jam cool for a few minutes before ladling it into sterilized jars.

Step Seven

Seal the jars tightly and store them in a cool, dark place. Allow the jam to set for 24 hours before consuming. Enjoy your homemade Abiu and Pineapple jam!
