What You’ll Need

  • 6 ripe Abiu fruits
  • 2 cups of whole milk
  • 3 tablespoons of granulated sugar
  • 2 tablespoons of cornstarch
  • 1/4 teaspoon of sea salt
  • 1 teaspoon of pure vanilla extract
  • 1/4 cup of unsweetened whipped cream
  • 1 tablespoon of lemon zest (optional)
  • Some fresh mint leaves for garnish (optional)

Method

Step One

Begin by peeling the ripe Abiu fruits carefully. Then, slice them into halves and remove the seeds. Keep the fruit pulp aside.

Step Two

In a medium-sized saucepan, pour in the whole milk, sugar, cornstarch, and sea salt. Heat the saucepan over medium heat and keep stirring until the mixture becomes smooth and thick. This usually takes about 5 to 7 minutes.

Step Three

Once your milk mixture is ready, add the pulp of the Abiu fruits into the saucepan. Lower the heat and continue cooking for another 5 minutes.

Step Four

When your mixture is thick and creamy, remove the saucepan from heat. At this point, stir in the vanilla extract and mix it well until it’s fully incorporated.

Step Five

Let the mixture cool for a bit, then pour it into your preferred pudding cups or bowls, leaving a bit of space at the top for the whipped cream. Put the cups or bowls into the fridge and let it chill for at least 2 hours.
