What You’ll Need

  • 1.5 cups of dried apricots
  • 1 cup of water
  • 1.5 cups of all-purpose flour
  • 1 cup of granulated sugar
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1.5 cups of rolled oats
  • 3/4 cup of unsalted butter, melted
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of fresh lemon juice

Method

Step One

Combine the dried apricots and water in a medium saucepan. Bring the mixture to a boil, then reduce heat to medium and let it simmer until the apricots are tender and the water has almost entirely evaporated. This will take about 15 to 20 minutes. Allow the mixture to cool.

Step Two

Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease a 9×13 inch baking pan and set aside.
