What You’ll Need

  • 1 cup fresh Aratiles (Jamaican Cherry)
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup whole milk
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon
ALLERGENS: gluten, milk, eggs

Method

Step One

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Line a muffin tin with paper or silicone cupcake liners.

Step Two

Wash the Aratiles thoroughly, remove the seeds and set them aside.

Step Three

In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, salt, and ground cinnamon. Stir to evenly distribute all the ingredients.

Step Four

In another bowl, beat the softened unsalted butter using an electric mixer until the texture becomes creamy. Gradually add in the whole milk followed by the large eggs one at a time, ensuring each egg is fully incorporated before adding the next. Continue mixing until all ingredients are well combined. Stir in the vanilla extract.

Step Five

Gradually add your dry ingredient mixture to the wet ingredient mixture. Stir gently. Do not overmix. The muffin batter should be slightly lumpy. This will result in tender muffins.

Step Six

Fold in the fresh Aratiles using a spoon or a spatula, ensuring the fruit is evenly distributed throughout the batter.

Step Seven

Fill each muffin cup 3/4 full with the batter. Place the muffin tin in the preheated oven and bake for approximately 20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Step Eight

Once done, remove the muffin tin from the oven and allow the muffins to cool in the pan for about 5 minutes. Afterward, transfer the muffins to a wire rack to cool completely before serving.
