One of my favorite recipes to prepare at home, or share among students at the grade school where I teach, is Aratiles Pancakes. A wonderful fruit-based delicacy that truly allows Texas’s vibrant seasonal bounty to shine through. There’s something incredibly satisfying about combining the heartiness of Southern enchiladas, with the natural sweetness offered by aratiles. I promise, it’s an experience your tastebuds will thank you for. Plus, it’s not just delicious; it’s also quite nutritious.
Aratiles Pancakes: A burst of health and flavor in every bite
The aratiles fruit, also known as Jamaican cherry, is a powerhouse of health benefits. It’s packed with impressive amounts of antioxidants, important for protecting your cells from damage, as well as vitamin C, essential for boosting your immunity. Paired with the protein-packed eggs and calcium-rich milk, Aratiles Pancakes not only make your mornings brighter but also contribute to your overall well-being.
Similar in texture to the American classic, blueberry pancakes, these Aratiles Pancakes have a unique tropical twist. The aratiles lend it a beautiful color and a slight tartness that pairs wonderfully with the sweetness of maple syrup. Plus, the texture of mashed aratiles nestled within the fluffy pancakes makes every bite a delight.
Experimenting with flavors
Beauty of this recipe lies in its versatility. Just like my homestyle Texan recipes, you can play around and add your own spin. Try adding some zest of lime to the batter for an extra kick or sprinkle some cinnamon on top for a warm, cozy flavor. If you’re serving these pancakes for brunch, consider pairing them with a Tex-Mex classic like huevos rancheros or chiles rellenos. The possibilities are endless with Aratiles Pancakes.
I love sharing and supporting traditional recipes, and this one holds a special place in my heart. I believe it’s recipes like these that keep our culinary heritage alive while allowing us to explore healthier, fresher options. After all, what’s not to love about a delicious dish that also contributes to your health?

What You’ll Need
- 1 1/2 cups of all-purpose flour
- 3 1/2 teaspoons of baking powder
- 1 teaspoon of salt
- 1 tablespoon of white sugar
- 1 1/4 cups of milk
- 1 egg
- 3 tablespoons of melted butter
- 1/2 teaspoon of vanilla extract
- 1 cup of fresh aratiles, mashed
- Additional fresh aratiles for topping
- Syrup for serving
Method
Step One
Start by sifting together the all-purpose flour, baking powder, salt, and white sugar in a large bowl.
Step Two
In a separate bowl, whisk together the milk, egg, melted butter and vanilla extract. Afterward, slowly add this liquid mixture to the flour mixture, stirring constantly until you achieve a smooth batter.
Step Three
Stir in the mashed aratiles into the batter. Mix well until the aratiles blend completely with the batter.
Step Four
Preheat a skillet or a griddle over medium high heat. Lightly grease the surface with a bit of butter or non-stick cooking spray.
Step Five
For each pancake, pour about 1/4 cup of batter onto the preheated surface. Spread out the batter slightly with the back of a spoon, if needed, to create a circular shape.
Step Six
Cook each pancake until you see bubbles form on the surface, then flip and continue cooking until it turns golden brown. Repeat with the remaining batter.
Step Seven
Top each pancake with additional fresh aratiles. Serve hot with your favorite syrup.
