What You’ll Need

  • 3 medium blood oranges
  • 2 large avocados
  • 2 cups of arugula
  • 1/2 red onion, thinly sliced
  • 1/3 cup of extra virgin olive oil
  • 2 tablespoons of red wine vinegar
  • Salt and pepper to taste
  • 1 handful of fresh mint leaves
  • 1/4 cup of toasted almond slices

Method

Step One

Start by washing the blood oranges. Slice off the top and bottom of each orange. Cut away the peel and white pith, following the curve of the fruit. Then slice the oranges into rounds and set them aside.

Step Two

Next, prepare the avocados. Halve the avocados and remove the seeds. Using a spoon, carefully scoop out the flesh. Slice the avocado into thin slices.

Step Three

Now, for the salad dressing, take a small bowl and whisk together the extra virgin olive oil and red wine vinegar. Season it with salt and pepper to your preference.

Step Four

In a large salad bowl, combine the arugula and thinly sliced red onion. Pour over the dressing and toss well until all the ingredients are coated in the dressing.

Step Five

Add the blood orange and avocado slices to the salad. Toss gently again to mix. Be careful not to mash the avocado slices.

Step Six
