What You’ll Need

  • 1 large wheel of Brie cheese (approximately 1 lb)
  • 1 cup of fresh cranberries
  • 1/2 cup of granulated sugar
  • 1/2 cup of water
  • 1 baguette, thinly sliced
  • Extra virgin olive oil for drizzling
  • Sea salt and black pepper to taste

Method

Step One

First off, preheat your oven to 350 degrees F (175 degrees C).

Step Two

While the oven is heating up, take a small saucepan, combine cranberries, sugar, and water. Bring it to a boil over medium heat. Once it starts boiling, reduce the heat and let it simmer until the cranberries burst and the sauce has thickened. This will usually take around 10-15 minutes.

Step Three

Now, place your Brie cheese wheel on a baking sheet.

Step Four

After the cranberry sauce is ready, carefully pour it over the Brie, making sure it covers the top and some side parts of the cheese.

Step Five

Place the Brie and cranberry combination in the preheated oven. Bake it until the cheese is soft and melty, approximately 15 minutes.

Step Six

While the Brie is baking, take your sliced baguette, lightly drizzle each piece with extra virgin olive oil, and lightly toast them in the oven or toaster until they are light golden brown.
