  • 1 whole rabbit (About 4-5 pounds)
  • Salt and freshly ground black pepper
  • 1/4 cup olive oil
  • 8 cloves of garlic, minced
  • 1 large onion, chopped
  • 1 bell pepper, chopped
  • 1 1/2 cups of dry white wine
  • 2 tablespoons chopped fresh rosemary
  • 2 tablespoons chopped fresh thyme
  • 1 cup chicken stock
  • 1 pound new potatoes
  • 4 medium carrots, sliced
  • 1 1/2 pounds fresh truffles, sliced thinly
  • Parsley, to garnish

Method

Step One

Start by preheating your oven to 350°F. Clean the rabbit, cut it into pieces and season with salt and black pepper.
