As a New York native and a committed food enthusiast, I’ve developed quite an affection for innovative, yet comfortingly familiar dishes. The same city that gave me my first taste of an authentic NY style bagel, or a well-dressed, juicy burger also introduced me to other wonderfully diverse treats, including the Baked Tambis Crumble. Oh yes, the Baked Tambis Crumble- a dish that paints a beautiful picture of New York’s multifaceted culinary landscape.

Baked Tambis Crumble

A Burst of Flavors

The Baked Tambis Crumble is like a warm hug on a cold day. Every mouthful reveals layers of texture and flavor- the crisp yet yielding crumble, the sweetness of the granulated sugar, the subtle citrusy hint from the lemon juice and the warming nod to the cinnamon, beautifully balanced by the soft, tart bite of the Tambis. It’s a joy to experience.

Like a good stage play, every element of this Baked Tambis Crumble works together- the tambis, or water apple, is not so unlike the city’s own Big Apple, both bringing in a distinctive, irreplaceable element to the dish and the city, respectively. Similar in taste to a pear, with a watermelon-like texture, the tambis adds a unique spin to this dish which reminds me of traditional apple crumbles.

Health Benefits and Pairings

Beyond delicious, Tambis are packed with nutritional benefits. They’re low in calories, high in dietary fibre and rich in Vitamin C and other antioxidants, making our Baked Tambis Crumble a sumptuous health packed treat. The inclusion of oats in the recipe adds an extra health boost, providing a good source of heart-healthy fiber.

This recipe is a stand-out on its own, but for a full meal experience, I personally enjoy it as a dessert after a hearty beef burger. The Baked Tambis Crumble complements rich, savory flavors beautifully, balancing a full-bodied main course with its refreshing, fruity finale.

From my table to yours, I implore you: try this beautiful, New York inspired recipe. And remember, wherever you are, let your cooking pay tribute to the melting pot of flavors your home offers. Happy cooking!

What You’ll Need

  • 6 cups of diced tambis (water apple)
  • 1 cup of granulated sugar
  • 1 tablespoon of lemon juice
  • 2 teaspoons of ground cinnamon
  • 1 cup of all-purpose flour
  • 1 cup of rolled oats
  • 1/2 cup of brown sugar
  • 1 stick of unsalted butter (1/2 cup)
ALLERGENS: Wheat, Gluten

Method

Step One

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). While the oven is heating, dice the tambis into small, bite-sized pieces.

Step Two

In a large bowl, combine the diced tambis, granulated sugar, lemon juice, and 1 teaspoon of the ground cinnamon. Stir well until all elements are evenly combined and the sugar has started to dissolve. Let the mixture sit for 10-15 minutes so the flavors can meld together.

Step Three

In a separate bowl, combine the all-purpose flour, rolled oats, brown sugar, remaining teaspoon of ground cinnamon. Cut the stick of unsalted butter into small pieces and add it to the bowl. Using your hands or a pastry cutter, mix the ingredients together until the mixture resembles coarse crumbs. This will be the crumble topping.

Step Four

Transfer the tambis mixture into a baking dish, spreading it out evenly. Sprinkle the crumble topping over the tambis mixture, ensuring it is spread evenly and covers all the fruit.

Step Five

Place the baking dish in the preheated oven and bake for about 35-40 minutes, or until the topping is golden brown and the fruit mixture is bubbling. Once baked, remove from the oven and let it cool for a few minutes before serving.
