Warm morning sunlight filters through the window as I pour the last drop of bubbly batter into the pan. I watch as it begins to form into one of my most cherished breakfast items – a delightful serving of Banana Crepes. This isn’t just any ordinary morning dish. It’s a recipe that is both indulgent and healthy, bringing together flavors that are close to my heart, tied to memories of early morning kitchen work with my grandmother, and carrying a special place in my family folklore.
Memories in Each Bite
Every golden crepe, every slice of banana, and every dollop of whipped cream takes me back to days spent in my grandmother’s kitchen. Although my beloved Nana hailed from the rolling hills of Ireland, she had a particular fondness for delicate French dishes. Inspired by this, the Banana Crepes are a fusion of our family’s Irish love for hearty, comforting food and the elegance of a dish often associated with Parisian breakfast tables.
Now, as I recreate this dish in my own kitchen in Boston, I cannot help but feel a rush of nostalgia. With every flip of the crepe, I remember my grandmother’s comforting presence in my life. Making this recipe is more than just cooking—it’s keeping a piece of my family history alive. And now, my dear Laura and our little boy get to share in this tradition.
The Healthful Indulgence
But these Banana Crepes aren’t just rich in sentimental value. They contain a lot of nutritional benefits too! With an abundance of bananas packed in, this recipe turns out to be a significant source of potassium and vitamin C.
The bananas indeed play a starring role in this recipe, but it’s the subtle hint of cinnamon that really ties it all together. Besides enhancing the flavor, this magical spice also has antiviral, anti-inflammatory, and antioxidant benefits. And let’s not forget the strawberries that not only garnish but also add a tangy twist and a healthy dose of antioxidants!
And did I mention the eggs, packed with plenty of protein? Or the milk, filled with bone-strengthening calcium? This recipe is a classic example of a dish that brings together taste, health, and heartwarming memories. It’s a breakfast treat that you can indulge in, knowing you’re nourishing your body in the process.
A Dish to Pair With
Though scrumptious enough on their own, Banana Crepes could be complimented with a hearty side of lean bacon, or even simply a fresh fruit salad. And, for those with a sweet tooth, pairing them with a generous scoop of homemade vanilla ice cream is a remarkably savory delight!
And there you have it! My love for this dish goes beyond the breakfast table. It’s a culinary journey that binds my past, my present, and my future family experiences. Every time I whip up this recipe, I have a chance to relive those cherished memories, keep my traditions alive, and create new ones with my beautiful family. One bite, and I’m sure you’ll love these Banana Crepes just as much as I do.
What You’ll Need
- 1 cup of all-purpose flour
- 1/4 teaspoon of salt
- 2 large eggs
- 1 1/2 cups of milk
- 1 tablespoon of melted butter
- Non-stick cooking spray
- 3 large bananas
- 1/4 cup of granulated sugar
- 1/2 teaspoon of cinnamon
- 1 cup of whipped cream
- 1 tablespoon of powdered sugar for topping
- 6 strawberries for garnish
Method
Step One
In a large mixing bowl, combine the all-purpose flour and salt.
Make a well in the center of the flour mixture and crack the two large eggs into the well.
Pour in the milk, followed by the tablespoon of melted butter.
Mix everything together until a smooth batter is formed.
Step Two
Heat a non-stick skillet over medium heat and lightly coat it with non-stick cooking spray.
Pour a scoop of the crepe batter onto the heated skillet and swirl it around to evenly distribute the batter.
Cook the crepe until the edges start to turn golden brown and the center appears set, then flip and cook the other side for another minute.
Repeat this process with the remaining crepe batter.
Step Three
While the crepes are cooking, slice the three large bananas into thin pieces.
In a separate bowl, combine the granulated sugar and cinnamon and toss the banana slices in this mixture until they are evenly coated.
Step Four
Once all the crepes have been cooked and the bananas have been coated in the sugar mixture, it’s time to assemble your crepes.
Lay a crepe flat on a plate, spread a generous amount of whipped cream on one half of the crepe, and arrange some of the banana slices on top of the cream.
Fold the crepe in half over the bananas and cream, then fold in half again to form a quarter circle.
Step Five
Dust the top of each crepe with a sprinkle of powdered sugar and garnish with a fresh strawberry.
Repeat this process with the remaining crepes, bananas, and whipped cream.
Your Banana Crepes are now ready to be enjoyed!
