What You’ll Need

  • For the crust:
    • 1.5 cups of graham cracker crumbs
    • 1/4 cup of granulated sugar
    • 1/2 cup of unsalted butter, melted
  • For the cheesecake filling:
    • 16 ounces of cream cheese, room temperature
    • 1 cup of granulated sugar
    • 1 teaspoon of vanilla extract
    • 4 large eggs
  • For the blackberry topping:
    • 2 cups of fresh blackberries
    • 1/4 cup of granulated sugar
    • 1 tablespoon of lemon juice
  • Extras:
    • Fresh mint leaves for garnish

Method

Step One:

Preheat your oven to 325 degrees F (165 degrees C) and lightly grease a 9-inch springform pan.

Step Two:

Start by making your crust. Combine the graham cracker crumbs, sugar, and melted butter in a medium bowl. Press the mixture firmly into the bottom of your prepared pan. Bake the crust in your preheated oven for about 10 minutes, then set it aside to cool slightly.

Step Three:

While the crust is cooling, start on your filling. In a large bowl, beat the cream cheese until it’s creamy and smooth. Gradually add the sugar and vanilla extract, beating until it’s well combined. Add the eggs, one at a time, beating well after each addition. Make sure to scrape down the sides of the bowl as needed.

Step Four:

Pour the cheesecake filling over the cooled crust in the springform pan. Place the pan on a baking sheet and bake it in your preheated oven for about 50-60 minutes, or until the center is set and the top starts to lightly brown.

Step Five:

While the cheesecake is baking, prepare your blackberry topping. Combine the blackberries, sugar, and lemon juice in a small saucepan. Step Six
