Blackcurrant Sorbet

A Sweet-Tart Delight, Bursting with Goodness

Now, why do I love the Blackcurrant Sorbet recipe? It’s probably the irresistible balance of sweet, tart flavor that these petite, glossy blackcurrants provide. Not only are blackcurrants little flavor bombs, they are also packed with Vitamin C, even more than oranges, and are brimming with antioxidants (source). So while creating this sorbet is a fun, simple culinary project, you’re actually whipping up a health-filled delicacy, a true embodiment of tasty meets healthy.

Perfect For a Balmy Southern Day or Fancy Dessert Pairing

This sorbet’s clean, bright taste profile makes it a perfect palate cleanser following a more intense meal, like my signature fried chicken or spicy crab boil. Alternatively, it could be an elegant accompaniment to decadent desserts; consider serving a scoop aside a slice of golden, buttery pound cake or my aromatic cardamom-infused biscuits. This sorbet carries just the right chill and zest to balance out warm, rich flavors.

Beyond my fondness for and the inherent healthfulness and versatility of this Blackcurrant Sorbet, my love for this recipe is also fueled by the joy and satisfaction it brings. What You’ll Need

  • 2 cups of water
  • 1.5 cups of sugar
  • 500g of blackcurrants
  • 2 tablespoons of fresh lemon juice
ALLERGENS: None

Method

Step One

Start by making a simple syrup. In a medium saucepan, mix 2 cups of water and 1.5 cups of sugar. Bring to a simmer over medium heat, stirring regularly until the sugar has fully dissolved. Once the sugar is dissolved, remove the saucepan from the heat and allow the syrup to cool.

Step Two

While the syrup is cooling, rinse 500g of blackcurrants under cold water. Remove any stems and leaves. Then put the clean blackcurrants into a blender and blend until they become a thick puree.

Step Three

Strain the blackcurrant puree through a fine sieve into a large bowl, discarding the leftover seeds and skins. This process will ensure a smooth consistency for your sorbet.

Step Four

Combine the cooled simple syrup with the strained blackcurrant puree. Add 2 tablespoons of fresh lemon juice. Mix everything together until the ingredients are well incorporated.

Step Five

Transfer the mixture into an ice cream maker and churn according to the manufacturer’s instructions. If you do not have an ice cream maker, you can pour the mixture into a shallow dish and place in the freezer. Stir the mixture every 30 minutes until it reaches the desired consistency.

Step Six

After the sorbet is churned or frozen to your preference, transfer it to an airtight container. Let it freeze for at least 2 hours or until firm before serving. Enjoy your homemade Blackcurrant Sorbet!
