What You’ll Need

  • 6 bone-in, skin-on chicken thighs
  • 1 cup dried longan
  • 3 cups chicken broth
  • 1/4 cup rice wine vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 star anise
  • 1 cinnamon stick
  • Salt and black pepper to taste
  • Steamed rice, for serving
  • Chopped spring onions and fresh cilantro, for garnish

Method

Step One

Season the chicken thighs on all sides with salt and pepper. Heat the olive oil in a large, heavy-bottom pot over medium high heat. Add the chicken thighs, skin-side down, and cook until the skin is golden brown and crispy. This should take about 5-7 minutes. Then flip the chicken thighs and cook on the other side for an additional 5-7 minutes. Remove the chicken from the pot and set it aside.

Step Two

In the same pot with the remaining oil, add the minced garlic and ginger. Cook for 1-2 minutes, or until fragrant. Add the star anise and cinnamon stick, cooking for another minute.

Step Three

Add the rice wine vinegar to the pot, scraping the bottom to remove any brown bits. Add the brown sugar and stir until it is fully dissolved.

Step Four

Add the chicken broth and soy sauce to the pot, stirring to combine. Return the chicken thighs to the pot, submerging them in the liquid. Add in the dried longan.
